Using a mandolin slicer, slice as many red potatoes as you desire for your meal or snack, and set aside.
Melt down a significant portion of coconut oil (enough to cover a thin layer of potatoes) in your cast iron pan on medium-high heat. Hint: You’ll know it’s ready for the potatoes if you can flick a little water on the oil and it sizzles.
Carefully drop in one slice of potato at a time until you have covered the bottom of the pan. Flip them as they start to crisp up. They will cook quickly. As they brown, pull them out using tongs, and set on a paper towel.
