Pork Roast, Oven-Roasted Veggies, and Grilled Pineapple

I love my crock pot.

It’s my favorite kitchen accessory, and in my place it has definitely been a well used accessory!

I pulled a pork roast out of the freezer last night, in order to cook it today in the crock pot. I kept the recipe simple, just sprinkle the roast with some garlic salt, rosemary, thyme, and black pepper, then let the slow cooker do the rest.

I also tried something new, I pulled a veggie mix and pineapple chunks out of the freezer and let them thaw on the counter.

The veggies were then placed on an aluminum foil covered cookie sheet, sprinkled with oil, and seasoned with salt and pepper. Then into the oven they went at 400 degrees.

The pineapple I planned to grill. So while the veggies were cooking, I grilled up all the pineapple. Sprinkling a little balsamic glaze that we already had around the house on the pineapple.

Dinner is served!

I didn’t hear too many complaints, so I am guessing it was a success, although there was one person who suggested the roast have more seasoning, or at least a sauce next time. If I was being honest, I’d say, I agree with them. Generally however, I eat probably a little blander than most so it didn’t occur to me to season it any more than what I did.
